Breakfast Casserole
1 pkg. sausage
2 pie shells
2 cups grated Swiss cheese
2 cups grated Colby-Jack cheese
1 cup Half & Half
1/4 cup chopped green pepper
2 tbsp. chopped onion
8 eggs, lightly beaten
Cook sausage until done, then drain. Prepare pie shells from scratch or use pre-made. Press pie
shells into a 9 x 13 casserole dish. Mix cheeses
with the sausage. Put cheese/sausage mix into
dish. Lightly beat the eggs. Combine the remaining ingredients and add to the egg mixture.
Pour egg mixture into casserole.
Bake at 350 degrees for 40 to 45 minutes.
Cool 10 to 15 minutes before serving.
Serve with biscuits and enjoy!
This recipe makes a great dish for any breakfast meal at family
or church gatherings. Use taco flavored cheeses and serve
with salsa for a Mexican flavored dish.

Mexican Pizza (another pizza that's not a pizza!)
This is a layer dip to be served with tortilla chips.
Start with a pizza pan and arrange each layer-it will look like a real pizza when you are finished.
1st layer - 2 16oz. cans of refried beans
2nd layer - 1 1/2 lbs. ground beef prepared with
1 pkg. of taco seasoning (per directions)
3rd layer - Mix together 8-12 oz. of avocado dip and
16 oz. of sour cream
4th layer - 4 cups of grated cheddar cheese (bagged
pre-grated cheese stays fresher)
Add chopped tomatoes and black olives on top.
My husband and son will eat this for a meal. It's really good served along with some Spanish rice.
Strawberry Pizza
Crust: 2 cups flour
1/4 teaspoon salt
1/2 cup powdered sugar
2 sticks margarine
Filling: 8 oz. cream cheese
1 can sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
Top Layer: 1 pint strawberries (sliced)
1 teaspoon cornstarch
Mix crust ingredients together and pat into a 9 x 13
casserole dish or pan. Place in oven and bake at 350 degrees for about 25 minutes or until lightly browned. Cool.
Mix filling ingredients and spread over cooled crust.
Thicken strawberries with cornstarch in small pan over low heat. Spread strawberries over filling.
Chill for several hours and serve.
This is the perfect dessert for those summer strawberries.
